Starting The Day Off Right


I know that this blog is aboout what I eat for lunch, but eating a salutary breakfast is just as important. This morning, my breakfast consisted of beets, grapes, an apple, an orange, celery, carrots, and watermelon. How did I eat all of that for breakfast? The answer is "Juiceman Jr."! I used a juicer and the result was 2 cups of super healthy fruit and vegitable juice! This breakfast was DELICIOUS and I recomend it to everyone reading this blog!

That's A Wrap!

Today for lunch I made a yummy wrap. I used guacemole, spinache, pico, tomato (yes, I know there's already tomato in pico, but so what, I like tomato.), alfalfa sprouts, and a flour tortilla. I only used half of the tortilla because I wasn't that hungry, but once I took the first bite of the wrap, my apetite instantly re-appeared! I thought I could taste barbecue, but that's not normal with this meal, so don't worry. It's possible the avocado I used was a little funky. I drank vitamin water with this instead of soda like usual. Wraps are great for lunch because they have the healthy servings of vegetables which flavors' complement eachother perfectly, and the tortilla helps fill you up so that you don't feel hungry, but you don't feel bloated and weighed-down either!

Hey everyone! I'm JJ. It's Summer which means I finally have time to eat lunch. I'm naturally a picky eater and my decision to transition into a vegetarian lifestyle may seem like it would narrow my food options even more, but eliminating animal flesh from my diet actually opened my taste buds up to a whole new world of foods and flavors! Now I'm no talented cook, but I do enjoy cooking and what's easier to cook than lunch (besides breakfast)? After discovering this blog --->http://veganlunchbox.blogspot.com I was inspired to share my creative lunch ideas with other lunch-eaters. Perhaps other vegetarians can get ideas from my blog, but really anyone could make these meals. Hoison Tofu With Rice, Pickle/Carrot Kabobs, and Blueberry/Grapefruit Salad
Today, I made a really simple and healthy lunch. I only used seven ingredients that you probably have in your own kitchen. First, I wrapped a 4"x4" portion of firm tofu in a paper towel to absorb some of the moisture. Then I cubed the tofu and marinated it in hoison sauce and fried it in a small pan on a low heat setting. I brought water to a boil in a medium sauce pan and then added the rice. While the rice and tofu were cooking on low heat settings, I cut up a carrot and a pickle and put them on big toothpicks. For the fruit salad, I took a few pieces of grapefruit from a pre-packaged fruit cup and stuck a few blueberries on top and TA DA! It's very easy to make, vegetarian and vegan friendly, and it's super yummy! I'll definitely make this one again!
